FIG´S SALAD

Fig´s season?, well I´ll try to make recipes to add colour to my table. I love the way mozzarella and figs marry, I love figs, I love to eat them and squeeze them in my mouth. I love this combination. We have to eat them now because their season ends in November. Buy them fresh now!. I was keeping this old recipe in my folders.



FIG SALAD
INGREDIENTS - Serves 3
200gr beans, peeled and cut lengthwise
1 shallot, thinly sliced
1 ball mozzarella, ripped into pieces
6 cherry tomatoes
10 figs, peeled or cleaned
50g hazelnuts, chopped
3tbsp balsamic vinegar
6tbsp olive oil
Salt to season

METHOD
I´ve peeled and cut the beans, steamed them for 8 minutes and inmediately rinsed into a bowl with ice. Drain them on kitchen paper. 





Arrange on a platter. I have a new one, this was a present from my best friend M. Start with the beans, the cherry tomatoes and the figs peeled or not and cut in half. Cut the tomatoes in quarters.


I peeled my figs, my boys didn´t want to eat the skin. 



Chop the hazelnuts. I´ve used a mortar


Add the hazelnuts, the mozzarella ripped into pieces and the shallot, chopped.


Make the vinagrette in a bol, mixing well the olive oil, the vinegar and the salt. Pour it over the salad just before serving.
