MINI QUICHE LORRAINE

Hoy ha sido fácil poner el título, se dice igual en castellano que en inglés y no ocupa mucho espacio. Una receta fantástica para llevar, los chicos se pusieron las botas con todas las cosas ricas que tenían para cenar, era noche de fútbol.
  1. It has been easy to write the title of the recipe today because we say it the same way in both languages and besides, it´s quite short. Today´s  recipe was to take away, the boys had a bounty of delights for dinner, it was football´s night.
He utilizado masa quebrada comprada, pero la receta que yo hago cuando tengo más tiempo es siempre la de Delia Smith, que utiliza mitad mantequilla y mitad manteca que para mí le da un toque especial. Es desde luego garantía de que salga perfecta, lo mismo que su quiche Lorraine que es la receta que he hecho para este post, la receta aquí, que aunque en inglés, el vídeo da una idea de los pasos a seguir.

I´ve used ready made shortcrust pastry from my local supermarket, but when I have time to cook, I always make Delia Smith´s shortcrust pastry recipe which for me is the best and it comes beautifully always. MINI QUICHE LORRAINE
INGREDIENTES para 12 moldes individuales
Un paquete de masa quebrada o hecha en casa
125 gramos de bacon que hemos asado hasta que está doradito ,en el horno, calentado previamente a 180º y que después hemos cortado con la mano en trozos de 1cm. aproximadamente
75 gramos de queso Gruyere
2 huevos grandes y una yema
300ml de crema de leche espesa
Sal y pimienta recién molida para sazonar

PROCEDIMIENTO
1. Colocar la masa en cada molde si se usan moldes individuales como los que estoy usando yo hoy.
2. Pincharlos con el tenedor y meterlos en el congelador durante 30 minutos. Este proceso hará que la masa esté crujiente.
3. Precalentar el horno a 190º durante 10 minutos. Sacar los moldes del congelador y colocar trocitos de papel albal o similar para darle un horneado. Hornearlos durante 15 minutos. Sacar los moldes pero no apagar el horno.
4. En un bol, batir los huevos y la yema. Con un poco de esta mezcla, pincelamos los moldes por dentro y volvemos a meter los moldes en le horno durante 8 minutos.
5. En el bol de los huevos batidos, añadimos la crema de leche, un poco de pimienta. No echar mucha sal porque vamos a añadir el bacon.
6. Una vez horneados los moldes y sin apagar el horno, los dejamos reposar 10 minutos y empezamos a montar la quiche. Reducir la temperatura del horno a 180ºC.  Primero añadimos unos trozos de bacon, luego el queso rallado y después un poco más de bacon. Para terminar, echamos la mezcla de huevos y crema. Echamos un poco de pimienta por encima y un poco más de queso rallado. Los horneamos durante 10 minutos, porque son pequeños y se hacen muy rápido. Si se hiciera con un molde grande, se hornearía durante 30 minutos, tiene que tener un poco de meneíto en el centro cuando se toca con el dedo
7. Se dejan reposar durante 10 minutos y después se desmolda. Son deliciosos.

MINI QUICHE LORRAINE
INGREDIENTS - SERVES 12 RAMEKINS
1 packet of ready made shortcrust pastry or homemade
125g smoked streaky bacon, grilled until crisp and then roughly chopped (preheated oven 180º)
75g grated Gruyere cheese
2 large eggs plus 1 large yolk
300ml double cream
Salt and pepper

METHOD
1. Roll the pastry round the ramekins. Press the sides with the fingers.
2. Prick the base all over with a fork, then pop it in the freezer to chill for 30 minutes.
3. Preheat the oven to 190ºC . Take the ramekins out of the freezer and place a piece of foil over each of them, then press them down over the base and up the sides of the pastries. Turn the edges of foil inwards and crumple them against the sides. Bake them for 15 minutes. remove them from theoven but don´t turn the it off.
4. Beat the eggs and the yolk and brush the base and sides of the ramekins with beaten egg, which will provide a sort of moisture so that the pastry stays beautifully crisp. Return the ramekins to the oven for 8 minutes more.
5. In the bowl with the eggs, add the whole cream and the pepper, be careful not to add too much sugar, remember we have the bacon and could be salty.
6. Remove the ramekins from the oven and reduce the temperature to 180ºC. Fill the ramekins by layering up the cheese, then some bacon and then more cheese. Next, pour the egg and cream mixture all over the bacon and cheese filling and sprinkle the surface with more pepper and reserved cheese. Put the ramekins back into the oven and bake for 10 minutes, this will vary from one oven to another, or until the surface is golden brown and the filling has set, you can test with your finger, the center should be wobbling. If we´re using a big baking tin instead of mini ones, we would bake it for 30 minutes instead.
7. Leave to rest in the ramekins or tin for at least 10 minutes before serving. They were gorgeous.

  1. Seguro que los chicos se lo pasaron genial viendo el partido en tu casa ,las mini quiche te han quedado espectaculaaaaaaaaaaaares no lo siguiente y no dudo ni un segundo que estuvieran de muerte relenta a las fotos e ingredientes me remito.

Pero que maravilla de quiches, te han quedado fabulosas anda que los chicos como se habrán puesto y lo bien que se lo pasarían viendo el partido y degustando estas esquisiteces, las flores preciosas y creo que de cebollino, el mio empieza ahora a florecer pero es una mota más pequeña jeje...Besitos reina

  3. Que ricos :) con lo que me gusta a mi... lo malo es que en versión mini yo igual como más jajja uno tras otro y como son pequeños no paro. Me han encantado y las fotos preciosas. Son flores de cebollino no? el mío ahora está llenito pero tengo el jardín tan salvaje que casi no se puede ni entra... me toca limpiarlo. Un beso!!

  4. No me extraña que los chicos se pusieran las botas, yo les hubiera pedido un hueco entre ellos y a ver el futbol para probar estas delicias mini. Me ha gustado mucho la opción del baicon bien tostado, así le da el toque crujiente, besos
