TORTIGLIONI AL HORNO {TORTIGLIONI AL FORNO}


De nuevo con mi libro de cocina de pasta favorito, un libro que me compré en Florencia hace un siglo y que hace una pasta fácil, rápida, sin muchas historias y sale buenísima. Yo he usado unos macheroni en vez de los tortiglioni, pero supongo que ese detalle no es tan importante.

Again I´m using my favourite book to make this pasta recipe. I bought it in Florence ages ago, and its recipes are simple, easy without making a total mess. Everytime I use this book, everyone is always very excited specially when they see me making a big pot of bechamel sauce. I´ve used this time macheroni instead of the tortiglioni of the recipe, but this is just a little detail and it´s not very important at all.

TORTIGLIONI AL HORNO - TORTIGLIONI AL FORNO

INGREDIENTES PARA 2 PERSONAS
400 gramos de pasta
50 gramos de tocineta o de jamón
50 gramos de mantequilla
2 bolas de mozzarella
Sal y pimienta
*1 litro de salsa bechamel

INGREDIENTS SERVES 2
400g pasta
50g pancetta or cured ham
50g butter
2 mozzarella balls
Salt and pepper to season
*1 litre of bechamel sauce

PROCEDIMIENTO - METHOD
Cocer la pasta pero dejarla un pelín dura, la terminaremos de hacer en el horno mas tarde. Colocar por encima unos trozos de las mozzarellas.

Boil the pasta but leave it a little bit hard. It will go into the oven later. Scatter some pieces of the mozzarellas all over the pasta.


Precalentar el horno a 180º.
Freír la tocineta y el jamón en una sartén, incorporarlo a la bechamel.

Preheat the oven to 180º.
Fry the pancetta and the ham. Put them into the bechamel sauce.


Echarlo por encima de la pasta. Terminar con la mozzarella.

Pour it over the boiled pasta and mozzarella. Scatter more mozzarella over the pasta, ham and bechamel sauce.


Hornear durante 20 minutos o hasta que forme una costra dorada.

Bake for 20 minutes, or until it forms a golden crust.


Pero con un interior maravillosamente fundido. Si se quiere, se puede echar queso parmesano por encima.

But with the inside full of meltin mozzarella. You can also serve it with some parmesano too.

Y siempre confiaré en mi libro de pasta. Una vez mas la receta estaba buenísima.

*BECHAMEL

PARA UN LITRO DE LECHE, 2 CUCHARADAS DE HARINA Y UNA DE MANTEQUILLA.
SAL Y PIMIENTA PARA SAZONAR.


Empezar derritiendo la mantequilla en una cazuela. ¡No dejar que se queme porque si no el color afectará a la bechamel!. Añadir la harina, y a fuego medio con una cuchara de madera o una varilla, empezar a remover con fuerza hasta hacer una pasta fina, tostando la harina mientras lo hacemos. Empezar a añadir la leche poco a poco, y seguir removiendo, así hasta que hayamos incorporado toda la leche. Sazonar con sal y si se quiere con pimienta.  Al final, tendremos una salsa cremosa y suave. Bajar el fuego y cocerla durante unos 5 minutos sin dejar de remover. Añadir a los platos y si la queremos conservar, cubrirla con plástico de cocina para que no se le haga costra.


FOR ONE LITRE OF MILK, 1 TBSP BUTTER AND 2 TBSP FLOUR.
SALT AND PEPPER TO SEASON

Begin by melting the butter gently, don't over-heat it or let it brown, as this will affect the colour and flavour of the sauce. As soon as the butter melts, add the flour and, over a medium heat and using a small pointed wooden spoon, stir quite vigorously to make a smooth, glossy paste. Now begin adding the infused milk a little at a time, and stir again vigorously. Then, when this milk is incorporated, add the next amount and continue incorporating each bit of liquid before you add the next.
When about half the milk is in, switch to a balloon whisk and start adding large amounts of milk, but always whisking briskly. Your reward will be a smooth, glossy, creamy sauce. Now turn the heat down to its lowest setting and let the sauce cook for 5 minutes, whisking from time to time. While that's happening, taste and season with salt and freshly milled black pepper. If you wish to keep the sauce warm, all you do is pour it into a warmed jug and cover the surface with clingfilm to stop a skin from forming.
