ESPARRAGOS Y GUISANTES EN TIAN {PEAS AND ASPARRAGUS TIAN}


Alguien me dijo en una ocasión que un tian es una fuente de ceramica que se usa mucho en la Provenza. Es como un plato profundo, donde se asan verduras en capas e incluso que también se les llama así a los mismos alimentos que van cocinados en ella. Yo he hecho hoy una receta que tenía de un recorte de una revista de hace algunos años ya. Tenía muchas ganas de probarla.

Somebody told me once, that a tian is an earthenware dish used in Provence, France to cook gratin; its name is also used for gratins, usually vegetable, cooked in such a dish. I´ve made a recipe I had kept for years now from a magazine. I really wanted to try this but with season peas.











Para mí es como una quiche sin la pasta brisa. Se puede usar cualquier verdura primaveral, desde alcachofas, calabacines, vainas o lo que sea.

Actually for me it´s a pastryless quiche, which makes the best of a handful of freshly picked spring vegetables. You can use artichokes hearts, sliced courgettes, french beans, whatever you want to use.




*ESPARRAGOS Y GUISANTES EN TIAN - *ASPARAGUS AND PEAS TIAN

INGREDIENTES PARA 4 PERSONAS
1 diente de ajo
1 cucharada de aceite de oliva
5 huevos grandes
2 cucharadas de queso parmesano (opcional)
2 cucharadas de nata líquida
1/2 cucharadita de nuez moscada recién molida
Sal y pimienta
500 gramos de esparragos trigueros
250 gramos de guisantes de temporada

INGREDIENTS - SERVES 4
1 garlic clove
1 tbsp olive oil
5 large eggs
2 heaped tablespoons grated strong cheese, Parmesan (optional)
2 tbsp full-cream milk
1/2 tbs freshly grated nutmeg
Salt and pepper to season
500g green asparagus spears
250g freshly podded peas



PROCEDIMIENTO - METHOD

Precalentar el horno a 180º. Escoger un plato que sea un poco profundo, de unos 25 cm de diametro si es posible. Lo mejor, hacerlo en una de barro que son las equivalentes en España.

Heat the oven to 180º. Chose a round shallow gratin dish of 25 cm aprox.. If you have an earthenware cazuela, which is the Spanish equivalent, so much the better.




Untar bien la fuente, con el aceite y el ajo.

Rub the dish with the cut side of a garlic clove and then with the oil.











Partir unos espárragos y distribuir unos guisantes en la fuente, reservar el resto.

Chop half of the asparagus and spread some peas all over the baking dish, reserve the rest.










Batir los huevos, añadir la crema y el queso si se usa, sazonar con la nuez moscada, la sal y la pimienta.

Beat the eggs, add the full-cream milk and the cheese if you´re using any, season with the nutmeg, salt and pepper.












Echar el huevo batido por encima, y distribuir el resto de los esparragos formando una rueda, decorando el conjunto y sumergiendolos un poco para que se queden bien hundidos en el huevo. Distribuir mas guisantes.

Pour the beaten egg all over the scattered veggies and arrange the rest of the asparagus spears on the top in a wheel, poking them down so that all is submerged by egg. Spread some more peas all over the dish.











Meterla en el horno durante 25 minutos, hasta que el huevo está hecho pero "tembloroso".

Transfer to the oven and bake for 25 minutes, until the egg is done but still trembling but no longer liquid.









Servir a temperatura ambiente, se irá cuajando a medida que se va enfriando, por eso es importante dejar el huevo un poco "tembloroso" en el centro.

Serve at room temperature, it will firm up as it cools, so it´s very important not to overcook the egg.











*Pero, esta receta no nos gustó. ¿Por qué?. Pues muy simple, hice la receta como la tenía en el recorte, yo siempre que hago una receta por primera vez la sigo al pie de la letra. Las verduras salen muy duras, no da tiempo a que se hagan a la par que el huevo con lo que no es muy agradable. Si la hago la próxima vez, saltearé antes los ingredientes, por si acaso.

*But we didn´t like this recipe at all. Why?. Well it´s quite simple to guess why. When I see a recipe and decide to make it, I always make it literally. These veggies were very raw for my opinion. The 25 minutes in the oven don´t allow the asparagus and the peas to be tender, it must be the egg or maybe the size of the peas, I don´t know. If I make this next time, I´ll sautée the ingredients first, just in case or at least some ingredients.
