PUDDIING DE TOFFEE PEGAJOSO {STICKY TOFFEE PUDDING}

Here I am, with a new challenge for the blog Film&Food. This time we had to guess without any word, which was the dessert we had to make. For me, very easy. A couple of posts ago I named my 5 favourite desserts. Well, I must confess I omitted one on purpose, I simply didn´t want to give a hint. London was again on my mind. I ate this dessert in there for the first time in a caffee after a salad. The moment I put a piece of it in my mouth, I knew this was going to be a keeper.

I´m going to serve it the same way I´ve always had it in London, in a huge bowl, just a couple of portions and sauce all over them. Oh yummy!. Thats why they call it "sticky" I suppose.

2 huevos
150 gramos de harina con levadura incorporada

INGREDIENTES PARA LA SALSA DE TOFFEE
200 gramos de mantequilla
400 gramos de azúcar moreno
Unas gotas de esencia de vainilla
250 gramos de nata líquida

INGREDIENTS FOR THE PUDDING - SERVES 8
150g dates, stones removed and chopped
250ml hot water
1 tsp bicarbonate of soda
60g butter, softened
60g caster sugar
2 eggs
150g self-raising flour

FOR THE TOFFEE SAUCE
200g butter
400g brown sugar
vanilla extract, some drops
250ml double cream

PROCEDIMIENTO - METHOD
Precalentar el horno a 180º

Prehear the oven to 180º

Chop the dates if you haven´t done it yet. Mix them with the bicarbonate of soda and the water together in a bowl and leave to soak for ten minutes.

In a clean bowl (I´ve used the Kitchen Aid for this), cream the butter and sugar together until light and fluffy.

Still stirring, add the rest of the ingredients. Start with the eggs, as I said keep stirring while doing it and make sure they are well mixed in. Keep on stirring and gradually add the flour, then add the date mixture.

Pour the mixture in a square or rectangular baking tin.

Hornearlo durante 30 minutos.

Bake it for 30 minutes.

PARA PREPARAR LA SALSA/ TO MAKE THE SAUCE

Melt the butter in a thick bottomed pan over a medium heat.

Add the brown sugar and the milk and stir well.

Dejar que se cueza durante 5 minutos.

Simmer for 5 minutes.

¿Quién dijo pegajoso?

Who said sticky?, this is delicious.

Who said this isn´t soft?

Who said this pudding has too much toffee sauce?. I could simply dip the pudding into the toffee sauce, and see how much does it absorb, to eat it after of course.

Gracias.

Good things come to an end. Oh God, I didn´t even realise I ate it all. This is what happens when you start eating this. Done!. I´ll see you in the next challenge. Thanks for giving me the chance to make this again. I love it.

¡LISTO!
DONE!
